I am a total microwave junkie. I admit it! I cook about half my meals I eat in a day, and over half of those are in the microwave. I sent out one of my easy vegan recipes a couple weeks ago and got a response from someone who was appalled that I posted a recipe in which the cooking instructions were “throw everything in the microwave until it melts and then stir together”. So it got me thinking, “Why do I use a microwave so much?”
I just want to mention we can all google hundreds of articles on microwaves and see that half say they damage the nutrients of our food and turn it into poison and the other half say the food stays the same as if cooked by stovetop or oven. That’s the www for you! Everyone is an expert.
I am NOT an expert, but I do know that I wouldn’t eat half the veggies and healthy foods I eat if it weren’t for my microwave. Every day I have at least 3-4 servings of veggies either straight from the bag or added to my meals that were once frozen. My friend asked me once, why don’t you just steam them on the stovetop? I won’t go into detail, but you can ask my hubby about the famous “egg” incident, or the “potato” incident, or any of the other times I put something on the stove before my ADD conveniently kicked in! It doesn’t end well for the food, the pot, the dog, or the patio which I thought was concrete and found out was plastic…but that’s a story for another day!
I am a “set it and forget it” kind of chef and if I have to stir, watch, or remember I am in the middle of cooking, it doesn’t work. What does work for me is tossing everything into the microwave, coming back to the kitchen when I either remember I started “cooking” or my belly reminds me I am hungry, and tossing everything into a giant bowl together and eating. That is what works for me. Cooking isn’t a priority in my life, I don’t want to take time to prep, cook, or clean.
About 3 times a week I will take a frozen meal (usually Amy’s brand because they are vegan and gluten-free) and microwave it, mix it with a bag of microwaved frozen broccoli, and enjoy. The same day I got the message from the “concerned reader” of my recipe, I was planning on making the Green Curry. One of my faves! I had a bag of broccoli AND a bag of mushrooms…BONUS…that I was mixing into the Green Curry frozen dinner. For a moment I thought, “Maybe I will cook the veggies on the stovetop and the Green Curry in the oven and work toward getting rid of the microwave?” I looked on the back of the frozen dinner and it literally said COOK FOR 40-45 MINUTES in the oven. And that is AFTER the oven preheats! Ain’t nobody got time for that! Especially since we don’t have one of those fancy ovens that shuts off after a few hours if I get distracted and leave the house with my lunch turning into charcoal in the oven.
So for now I am sticking with my microwave! But I don’t judge! You can decide what is right for you and what works with your life. I have plenty of friends and family who love to take the slow road and actually enjoy standing over the stove stirring something to create a masterpiece for their meal. That’s just not me. I grew up with a loaf of bread, peanut butter, and jelly in my room so I could throw together a sandwich on my way out the door to my next adventure, which usually involved smurfs, our tree house, and the ditch…but again…that’s a story for another day!
